Hello like otherr posts I am moving to EE and I am not retaining my Phone number

I have a Smart Hub in bridging mode with a Orbi Router and WiFi network

Does the Smart Hub Plus have bridging mode?

No BT residential hubs have a bridge mode, you must have a business hub.

I doubt EE residential hubs have a bridge mode but as you don't require telephony, you don't need to use an EE hub anyway. Just connect the Orbi directly.

Sorry if I am being a bit thick but how do I do that my wall socket is RJ45 and I only have CAT5 connections on the Orbi

I was assuming you had FTTP rather than FTTC.

I think you should be able to continue using your BT hub as now.
