I currently have the BT Mini WiFi Home Hotspot 600 Multi kit which is all working well. However, I need to add an extra hotspot and am a bit confused as to how to do that. The User Guide has instructions on how to add more "Extenders" but I thought you would only need one "Extender". It is wifi hotspots that I want to add. My question therefore, is how to do that and is it neccessary to add the extender that would come with it as well.

Do not use the extra main unit, just keep it as a spare.
Follow the guide as if you were adding the extra hotspot, but use the existing main unit where it make reference to it. Its all in the guide but its very confusing.
This is the only bit you will need
It quite possible to add four hotpots to the main unit, if you are using a BT home hub.
Do not use the option to clone the home hub settings.
If you are not using a BT home hub, then certain precautions may need to be taken.

Thank you very much for that. You are certainly right that it is very confusing, and I think that that is partly because of the inaccurate use of the word "extender" for the additional hotspot unit.
Be that as it may, the instructions are essentially the same as ones I have for re-pairing hotspots. My only remaining question, therefore, is whether I need to "unpair" the new hotspot before installing it and, if so, how would I do that. Do I, for example, need to do a "factory re-set" on the new hotspot?
When I added extra hotspots to the network at my daughter`s house, it was not necessary to un-pair the extra hotspot.
All the process of pairing does, is to transmit the encryption key from an existing hotspot, to the one you are adding. This will overwrite any stored encryption key.

You normally pair it with an existing hotspot, as described in the manual.
