How can I assign a printer to the 2.4 band only, and not have it on dual band?

You can't 'assign' one device to a band. If you only want to use 2.4Ghz simply turn off 5Ghz

If you have a HH6, you can give the 5GHz a different name, and then connect your device to the 2.5GHz network.
