@kissoff_matt it sounds like you're pressing the skip button which skips 60 seconds and it's not possible to adjust that.
The fast forward button looks like this it's directly above the skip button you're pressing and if you keep pressing it will adjust the forward speed. When you reach the bit you want to watch, press play.
I find this the best method when you only want to fast forward a few seconds.

Surely the question posed was about the skip option time so the fast forward and rewind button functions are irrelevant

FWIW the 60 second skip forward and 15 second skip backward seem about right to me and I can't see an easy way they could be made user time variable so I'm less than in the queue to have the ability to alter settings to give a shorter skip forward time
