I am due to go live on 10th December 2020, however on logging in to check my order it says
Your equipment is waiting to be dispatched. However, we have encountered a delay and therefore, it may take longer for us to deliver your equipment.
The equipment was due to be here by tomorrow. What will this mean for me in terms of my 14 day cooling off period? Why would equipment be likely to be delayed, I appreciate any help on this.

Welcome to this user forum.
The 14 day cooling off period starts once your service has been activated.
What broadband package did you order?
Get yourself a 2nd user compatible router from that well known Internet auction site or get a new one from "The rain forest"
I ordered the standard broadband as no fibre in my area, it was the Black Friday deal 3 months broadband for free. I have a router from TalkTalk would that work if I hooked it up, or is it incompatible with BT broadband?

I doubt if the TT router would work, as it would be locked to TT.
I expect BT are short of the Home Hub 4, which is the normal one supplied for ADSL.
You can normally obtain a suitable modem/router locally for about £35, which works with all providers on ADSL and VDSL, if you are concerned about the delay. Argos normally sell it, or you can get it online.
Its this one https://www.tp-link.com/uk/home-networking/dsl-modem-router/td-w9970/
That is what I use on ADSL.
