Might vary according to device but I had a quick look at the app on a Samsung phone
if you have the INbox list of messages showing in the app there is 3 horizontal bar symbol on top left that if selected lists your mail folders and at the top it lists/scrolls your current email address that you are signed in to. To the left of this there is a square box symbol with a arrow protruding , selecting that box gives a Sign Out option asking for a confirmation.
