Using a different router/modem with infinity

If I were to use a different VDSL modem/router with my infinity (like netgear or similar), would this prevent the broadcast of the BT zone/wifi with FON signal from my router whilst still allowing me to not officially opt outof the service (and therefore continue to enjoy the benfits of it?)

yes you can however BT WiFi does not affect your connection as you always get priority of your connection and actual connection speed

Just wondering as I do not live somewhere it would be of benefit to anyone and I do not like the idea of my devices connecting to the Home hub via FON rather than my own connection, just seems a bit of faff.

You do not need to connect via BTWifi. You would connect to your private network being transmitted by the Homehub.

BTWifi is a separate public network transmitted by the Homehub.

gg's right. If you're otherwise content with the home hub, setting up a new router would be an unnecessary faff as well as being a waste of money.
