just want to know in you can use digital voice with answering machine or with Truecall https://www.truecall.co.uk/ this here can it be plug into ONT?

It would plug into the phone socket on the back of the Smart Hub 2, not the ONT as the Fibre Voice service is no longer being provided.
but that says its for digital voice so you can use that answering machine.
and is Fibre Voice service the old one not the digital voice
The socket on the Smart Hub 2 is for plugging in devices which are not linked to the DECT base station which is built into the SH2, and is used with the special BT Digital Voice Phones.
The fibre voice service was totally different, and used the TEL1 socket on the ONT to allow you to plug in any phone etc.
If you are planning to order FTTP from BT, then if you already have a copper phone line, then this will remain the same, and only the broadband will be delivered over fibre, unless you opt for the digital voice service.
@Keith_Beddoe The copper phone line is not guaranteed to remain as Digital Voice is being phased in. This from a BT spokesperson.
"FTTP to brownfield (not new build homes) is in the process of a phased launch, meaning that not all customers contacting BT will receive the new Digital Voice service as an option.
However, we are in the process of scaling availability of our Digital Voice service through 2020, into 2021."

we are thinking about having full fibre fitted if so
where do we plug our standard phones in and
do we need any extras to do it

It depends whether you can get digital voice as it is not available to everyone yet
