If you do not use the sockets then there is not a lot of point leaving them connected.

Where does you phone line actually come into the house from outside?

I assume you are not fed from a telephone pole?

It comes in via an external junction box (grey type) on outside wall. House is around 10 years old

Is there only one cable coming out of that junction box, which is going into your house?
