Currently on fibre 1 and contract ends in May and looking at upgrading to full fibre 100 for the speed
Will be internet be interrupted for the upgrade
Am I better upgrading now or in may
Will it involve getting a new box

It involves moving from a copper connection to your house to a fibre connection to your house. There will be disruption whilst this happens.
Contract end date is irrelevant.
Yes, the fibre will be connected to a fibre modem (ONT) which will then connect to your router.
