I've upgraded my broadband to full fibre and by the time openreach & BT have completed the installation it will have taken SEVEN weeks to install. The install would have been complete by now if the second stage of the installation could have been completed on a Saturday..... but here I am having to wait until 29th July.

Openreach are probably busy, which is why BT have given you that activation date for your upgraded broadband package.
BT don’t install FTTP on any day of the week , it’s not BT’s role .
Openreach can and do work on Saturdays , but weekends are not standard working days , so ‘appointments’ are not routinely offered to ISP’s on weekends and certainly not on the same terms as Monday to Friday appointments .
Saturdays are used when it suits OR’s purposes , like if a surge in demand warrants it ,or to catch up on compensation paying delays , or if there is a high volume of faults etc , so some consumers get a Saturday attendance if it suits OR , there is a difference in being offered a Saturday and ‘insisting’ on a Saturday.
FWIW , OR do offer premium ( flexible ) appointments to ISP’s , these can be arranged for weekends and for outside normal hours ,but this is a charged for premium service on top of the standard charges , which may seem unfair to someone paying to guarantee this attendance, when OR provides a Saturday service to someone else for ‘free’ because that suited OR workload .
Would you be prepared to pay the extra charge for a weekend appointment , and although available, ISPs may not want to offer this Openreach product , even when it is available , as they will be on the hook for the premium payment if the consumer doesn’t pay , it certainly messes up standard pricing.
Presumably you are not available to be home during the week and can’t arrange for someone else to be available to grant Openreach access until the 29th July , if you want a standard price installation ( effectively free to you ) then it’s Monday to Friday, I don’t know if you were offered a premium Saturday option or not , most ISP’s ameliorate standard installation cost into the monthly fee but would expect the consumer to pay for any premium product used and it may not be worth the hassle to arrange a premium flexible appointment, especially if ‘free installation’ is expected.
