You can not change an email address to a different name. Each address is unique.
You would need to set up a new email address with your new name.
Once you have done that you would need to tell all your contacts to use the "new" email address. During the transition you could have your "new" email address "fetch" the emails from your "old" email address so that you would not miss any emails that were still being sent to it.
