How do I prevent massive gaps between paragraphs in the layout a recipient gets an email?

When I'm composing an email in the mail webpage, the format and layout is fine until I see massive gaps between paragraphs in my recipients email. Why is this?

When you receive emails, do you notice the same gaps between paragraphs, or does it only happen when you send emails? Which web browser are you using, and does this happen with all recipients or just certain ones?
