This is a nightmare. My mum is the same. She has a landlines which isn't working but no mobile and Internet.

The BT website provides no way to get help as the chat is down. I have no idea what to do...

Provided she is a BT Retail customer, then you can ring 0800 800 150 and specify her number when prompted.
