Adding Access Points for stronger speed/range

Hi, I have made the decision to purchase  ubiquiti access points. one for the  outdoor space and one of the bedroom in home.   signal is drops out outdoors and in one of the bedrooms, even with a very powerful Asus AX88u Wifi 6 router. My question is  would i need an addition PPOE switch for the access points to work or would a Cat 6 cable from the router to the outdoor space and into the access point work fine.

I think you mean Ethernet switch not PPPoE switch. But no, you just need an Ethernet cable to each access point from the router.

Or did you mean POE, power over Ethernet? If the WAPS are not mains powered, then yes, you will need a method of power injection as the hub doesn't supply POE.

yea POE i think one of the access points need power for it work like a switch adaptor or some sort i dont think that powering it with ethernet from the router would not work.

No, you can't power it from the hub.
