Subtitles on Sky Atlantic, Sky One etc

Hi, I am deaf and wondered if you subscribe to the above channels via the EPG, are there subtitles on these channels?

I watched a few programmes from sky witness and they did have subtitles. However I've found some of the older shows broadcast on the sky channels don't. Now TV have been adding more subtitles over the past year, it seems the newest stuff is mostly subtitled.
