I was previously with BT several years ago and always had to pay my bills every three months, rather than every month. I am looking to come back to BT but was wondering if this was still the case or if you all pay monthly now.

You are far better paying the whole bill every month.
If you decide to go for a monthly billing plan the monies taken from your bank account will be based on BT's estimate of your usage. This has the obvious problem where they can over or under estimate and you end up either having too much or too little taken from your account every month which may or may not be enough to cover the cost when the quarterly bill comes in.

Quarterly billing is no longer an option for new customers or existing who pay monthly, anyone on quarterly can remain that way.
