How do I connect to a network in Tahiti? I can see 3 local mobile networks but I can't seem connect to any of them. I have tried 3G and 4G data options and also restarting the phone

Have you checked your BT account to ensure roaming is enabled? May also need to increase your spend cap to above £0 if it’s not already.
