My elderly aunt wants wifi. She has a BT phone line years ago which I am assuming needs to be reconnected as it hasn’t been used for 10+ years.
when the line is reconnected for internet options does she have to have a phone number/phone package or can she just have the internet?

No, she can have just broadband.
She can order Broadband only. This means that she does not have a landline telephone.
Does that mean she has to have broadband with BT tho?
No, of course not.
If you don't want a home phone then you can select any provider you wish does not have to be BT
However you still need a physical line whether that is copper or fibre to enable an internet connection

The line is provided by Openreach, not BT, so it does not matter who you use.
