YouView use a system called AR to control when Freeview  programmes recording start and stop 

The idea is that the broadcaster will make these times exact in its broadcast transmission signals.

But it is not mandatory for channels to do this so if they don’t the recording will default to the timings shown in the EPG. 

So the lesser channels tend to use the EPG times, and not quite stick to them.

As @zulu17 mentions there are certain lesser channels that have issues with AR and if you find it's a specific channel/programme then one solution is to always record the following programme.

The inability to add padding or set your own timings is probably the most complained about non-feature since Youview's inception. Never going to change now I'm afraid.
