I have received 3 emails in my spam folder in the last week from someone purporting to be from Fedex. The emails didn't have a sender's address so I couldn't block it or report it. Why does BT not block this type of email?
Because the senders use millions of different variations of an email address to continue their scammers.
Surely, no sender's address equals invalid email.
If you check the headers of the email by clicking on the "More" button in the menu bar then "View source" you will see the full details including the sender regarding the email.
You can try blocking the senders domain but you will no doubt find that you are wasting your time because the spammers use computer generated email accounts and you will never be able to block them all. If it was able to be done the ISP and email services would already be doing it.
I did that for the first one but the there was no sender's address or even domain. After checking just now, it was there. But, wierdly, checking again I just got:

The option to block the sender or domain is greyed out so still not available. I have been blocking other spam emails with success, but obviously not these.
Block it manually by going into settings but as I said, don't expect them to stop.
