Having problems with email on new BT App on Apple iPad. Firstly I cannot find Mail options to allow me to change to Rich Text and also the default characters for composing an email is in italics. How can I change all of this.

Use a different mail app. Either the built in Apple mail app or Blue Mail.
Or log onto your email account using a web browser and change the setting there by clicking on your username and going to settings then Mail in the left hand column.
