If you want to sort them by the sender's name you click on the "From" button in the menu bar at the top of the list of emails in your Inbox.
As regards the Inbox sorting, I have not used it as I fail to see the need to have extra folders in your Inbox but if you decide to use it you first need to click the "Inbox Sorting" in the settings page then you need to create and name a new folder(s) in the Inbox by clicking on the folder+ icon at the right hand side of the Inbox name.
Once you have created your folders you can then drag and drop or use the "move to" function to place your emails into the relevant folder(s).
Once they are in the folder, they will be stored there but they will be shown in your list of emails. You can move/delete etc the emails as though they were still in the "main Inbox" If you subsequently delete the folder, the email contained will also be deleted and no longer show in your list of emails.
If you just set up extra folders in the Inbox without ticking the "Inbox Sorting" the emails will be in the folders but they will not show up in your list of your Inbox emails and you need to open the folder in order to move /delete etc and if you subsequently decide to delete the folder the email contained will also be deleted.
