Had digital voice installed about 5 weeks ago so can I now remove my old phone sockets and phone line from point of entry to my house

It depends on how your broadband comes in. If you are on full fibre then it would be technically ok if you are on part fibre then you would have an issue.
This being said the line belongs to openreach so not really yours to remove

If you have fibre to the premises (FTTP - router/hub connected by ethernet cable to an "ONT" on the wall with green indicator lights) then, yes your old phone socket and wiring is redundant.
However, if you have fibre to the cabinet (FTTC) then your hub/router will still need to be connected to your old phone socket to get its broadband feed, so this socket is not redundant even though it no longer feeds your phone.
