I have a BT Smart Hub 2 router and I need just one more ethernet port for my Ring Video Doorbell Elite.
Can anyone recommend a simple plug and play one ?
And is it just as simple as plugging it in and everything works ?

You just need a Ethernet switch.
Like the TP-Link TL-SG105S
That would give you four extra ports, its just plug and play.
You just need a simple unmanaged 5port Ethernet switch. Use one of the 4 ports of your hub to connect to one port of the switch and you gain 3 extra ports. 1 port to the hub, 1 port to the device who's port you pinched from the hub and 3 spare.
Apparently direct links are regarded as spam, so just Google "5 port switch" & go for whatever you fancy. Preferably from a known brand.
You just need to connect one of the LAN ports on the SH2 to one on the switch & you'll have an extra four to play with in future.

Nope, only 3, you need one for the device who's port you pinched from the Hub 😄

As the Ring Video Doorbell is powered by POE ( the reason I'm getting this ), I need one that will power the doorbell using the ethernet cable, so, just a normal ethernet port hub will not work, right ?
You either need an Ethernet switch with POE capability or a separate POE injector along with a cheap switch.
The TP Link TL-SG1005SP V2 is about £40
