Not getting guaranteed speeds

To start it off, I recently upgraded my BT Broadband to the Full Fibre 500 with Halo 3. I used to have the package that gave me 75mbps but now im supposed to be getting 500mbps or near enough. 

Its been about a week now and Ive noticed that my Wifi speeds haven’t risen above 200mbps. I can’t check the Wifi speed on the BT App anymore (i used to before I upgraded) and sometimes i notice my speeds drop as low as 60mbps.

I don’t know what to do. Ive tried restarting my router and disconnecting my devices from the internet. Any help would be appreciated

The 500Mbps is only guaranteed at the router and at any equipment connected by ethernet cable. The WiFi speed will be affected by many factors - distance from the hub, interference from nearby WiFi installations etc, and will be unlikely to ever reach 500Mbps. The 200Mbps that you're getting seems to me to be pretty good.
