I am able to watch the live channels on the BT Sport app but when I try to watch other content such as catch up, replays, films/documentaries etc I receive a VP error “Sorry, you’re not able to watch this content outside of the UK”
I am in Jersey, Channel Islands so the new Brexit rules should not apply?
Does anyone know how this can be fixed?

That sounds very odd @GlenD1 - could you please send me a DM with the BT ID you're logged into the app with, and I'll check what's going on.

I am now receiving this error message again. It was working for a while but I now can only watch live channels again and no catch up.

Our records show that you're attempting to route through a proxy server registered in Ireland @GlenD1
So the issue is actually that you shouldn't even be allowed to watch live TV now.
Edit: I can see a large number of attempts from multiple different IPs. I do eventually see a request from an IP in Jersey that should have succeeded, but was rejected. I've raised a ticket for this to be fixed or explained.
