Today I have been informed that the engineer is delayed by a week. My old broadband provider was told they will be disconnected on the 19th and now the engineer will not come until the 28th September. Will my existing provider be notified? Will I continue to have WiFi from the 19th September to 28th September? What happens? Or is it best to stay with my existing provider?
If you followed the correct procedure, by applying for service from BT Retail, then they would have informed your existing provider that they were taking over your service on a specific date. There would be no need to contact your existing provider, unless they were Virgin Media, who have their own network.
If there is going to be a delay, then you can ask BT to send a 4G mini hub, provided you have mobile coverage.
BT informed my WiFi supplier that BT would take over on the 19th September. My supplier informed me of that. But today BT says the engineer will now install on the 28th September. Will BT discuss changes with my supplier and extend my contract with them until the 28th?

No.
It would be useful to know who you're moving from & what services you're moving from/to.
