1. Will my landline number change when our Digital Service is activated?
2. How do I transfer our stored numbers from our old Analogue phones to our new Digital Phones?

Not 100% guaranteed, but you shouldn't luse your number.
Unfortunately, there is no way to transfer the numbers.
Your tag quote refers to a USA legal ruling whereby a person who's convicted of 3 crimes of violence gets an automatic life sentence.
It's commonly known as the '3 strikes & your out' law as that's how Governor Wilson described it.
A similar law was around in the years of the US prohibition which coined the phrase ' 3 time loser'.
1 - Provided nothing happens with the order, there's no reason you'd lose your existing number, even if it does then it's also possible to recover it.
2 - Use your existing phone, no need to folk out money for Digital Voice phones if you have an existing working handset.
Without checking I'm fairly certain that a phone number has to be held for around 30 days before it can be released into the available number pool.
This is to give the time for this potential situation to be rectified.
As you suggest, we'll be using our existing phone extension network by plugging it into the Hub 2, after we've ok'd it with the OR engineer, so it'll be a seamless changeover.
