Make sure Smart Setup is disabled on both hub and WAP. Do you have Private address - MAC randomisation enabled on your Apple device, if so disable it.
Smart setup is off on both as is private address on apple device.
I set the dns server manually on the apple device. This now shows a a "wifi indicator" that was previously missing. However, it still doesnt give me internet and I still cant ping the router from my apple device (though I can ping other devices connected to the router).
Question appears to be why would router not send information back to apple device?
Could you post a screenshot of both the hub and WAP Advanced Settings>My Network>IPv4 configuration please.

A couple of things to try.
First shouldn't make any difference, but set the DHCP lease time to 21 days on the hub.
Secondly, try disabling authoritative DHCP on the hub.
The WAP seems to have a custom DHCP range and lease time set despite DHCP being set to off which seems odd.

WAP DHCP custom setting - something I changed in the past but as DHCP is off I understood these had no effect.

That's why I queried it, with DHCP off there should be nothing showing.
If you have factory reset the WAP, it shouldn't retain the custom setting either.
Are you sure you fully factory reset the WAP and set it up again?

I have now factory reset WAP (and router for good measure). Screenshot of router and then WAP management page. As you said the custom settings doesnt have anything on WAP page. However, when I save the settings and go back in, the custom settings return though they are with the default setting parameters.
Unfortunately - still no luck.

Hmm, that shouldn't happen. I wonder if the HH6 you are using as a WAP is faulty.
Not sure if you want the hassle, but it could be worth swapping the 2 hubs over and see if that works.
Happy to try it. Will leave it till tonight when family dont want wifi.
