In the last few days no emails are appearing in my Inbox when accessed via https://email.bt.com/mail/index-rui.jsp?v=2.22.1#app/mail on Firefox browser. I can see the emails on the outlook app on my phone and PC.
I get the message 'Empty Mail List'. Contents of all other folders are visible.

You need to check your Outlook on your phone and PC to see if it has been set up as a POP3 account and if it has that the box "leave mail on server" has been ticked.
If it is a POP3 account and the box has not been ticked it will download the emails onto your phone/PC then delete them off the BT server which will obviously delete them from your Inbox when you check using a web browser.
I don't think this is the cause as 'leave mail on server' has been ticked.
Also why would this have happened in the last few days? I always saw all my emails on the web browser before.

I never said it was the cause, I said you should check the reason being it may have been changed with an update in Outlook

The issue is clearly still outstanding though...
