Is it possible to connect a BT digital phone to a Google Wi-Fi mesh that does not support WPS?

The phones use DECT, not Wi-Fi, so the answer is no.

No.
If you wish to use BT digital voice, you have to use the SH2 as the first device connected to line/ONT. You can use the Google mesh in conjunction with the SH2 or you could abandon BT Digital Voice and use a third party VoIP service instead.
