I had my broadband upgraded to Fibreoptic at home by my employer but they discontinued the old landline under a previous arrangement and my new arrangement is broadband only.
I like to set up a digital voice line which I will pay for, can BT do this for me?
Yes but might be easier to go to a third party VoIP provider.

No, that would not be possible as BT Digital Voice is only carried over BT Broadband, I assume Fibreoptic is a different service provider?
BT FTTP does offer BT Digital voice as an option, at the time of ordering.
As you have broadband only you would need to cancel existing contract then take a broadband and phone package which would be paid by employer
Probably better in a separate VOIP phone as suggested by @pippincp and that way you can pay separately

Yes but you only have BT broadband package and you need to get broadband and phone. You cannot just add phone but need new package
